Rum Soak-Misu

A play on the tiramisu, this uses the rum liquid to dip the lady fingers and builds that flavour further with chopped-up fruit in the center as a boozy surprise. I used a two-year-old rum soak which made the rum pretty potent so this gets further diluted by fresh orange juice to add a lot of that fresh flavor!

Ingredients

200 grams mascarpone

200 ml cream

6 tablespoons of sugar

1 sleeve (about 12) of lady fingers

1 teaspoon of vanilla extract

1 cup of rum soaked fruits

1 cup of rum

Juice of 1 large orange

1 teaspoon ground cinnamon

1 teaspoon confectioners sugar

Method

  1. Start by chopping up your fruit and sieve out the rum to which you can straight up squeeze the juice of one orange

  2. Using an electric beater or whisk your cream by hand until you get stiff peaks

  3. In a separate bowl, add mascarpone, sugar, and vanilla extract and mix well.

  4. Now incorporate the cream with the mascarpone until you achieve one homogenous mixture. Make sure to do this gently so that you don’t punch the air out.

  5. Now to arrange, dip each ladyfinger on both sides and place in a glass dish. Place one layer of the cookies and then pour half the cream mixture. Add the chopped fruit and repeat the same process.

  6. Place in the fridge overnight and then dress the dish up with a mix of powdered sugar and cinnamon.
