Grilled Cheese three ways

Everyone loves a good grilled cheese. My nani used to make a grilled cheese that I can never forget. On some days, after school, I would go her home instead of going to mine. My nani would make the simplest sandwich with some plain white bread toasted with butter and a single slice of processed cheese in the centre. What made them memorable was that she would cut the sandwich into a 3 by 3 square which in my head really increased the number of bites I got into one humble sandwich.

In honour of her cheesy dish, I am making my version of her sammies but three ways!


OG Grilled Cheese

The classic grilled cheese is an all-time favourite and can literally never go wrong. Two words of advice, use a heavy pan made of cast iron. This will add the perfect caramelisation. Secondly, always add two kinds of cheese for the best blend of texture. My choice: Processed cheese and Mozarella.

Ingredients

2 slices of sandwich bread

1 slice processed cheese slice

A handful of Mozarella cheese

1 tablespoon of butter

Method

  1. In a pan on low heat, add a buttered slice of bread

  2. Add your cheese

  3. Butter the other slice of bread and then keep moving the sandwich around until you get that beautiful golden crust.

Confit Tomato Grilled Cheese

Confit tomatoes are basically tomatoes that are slow-cooked in olive oil and some spices. They make them super sweet and packed with flavour. Adding them between some cheese and bread and you have a winner 💫

Ingredients

2 slices of sandwich bread

1 slice processed cheese slice

A handful of Mozarella cheese

1 tablespoon of butter

1 tablespoon of confit tomatoes

Method

  1. In a pan on low heat, add a buttered slice of bread

  2. Add your cheese and confit tomatoes

  3. Butter the other slice of bread and then keep moving the sandwich around until you get that beautiful golden crust.

Pepperoni and Chilli Oil Grilled Cheese

My chilli oil recipe is fabulous if I say so myself because it brings both the heat and sweet in anything you add it to and this sandwich is no different. Somehow, pepperoni and chilli oil works wonders. Who knew?!
